I thought I would share with all of you one of my family’s favorite dinner – Burrito Bake!  This meal is such a staple to our family that it was requested to be the first meal in our new home – to truly make it feel like home!

It’s perfect for the cold days we’ve been having and makes fantastic leftovers!

Brown your ground meat so that it is completely cooked through.  I like to use ground turkey a lot with this dish.  It seriously cuts your cost (being half the price of ground beef in my area) and there is enough seasoning going on you really can’t taste the difference.  Now just add your Taco Seasoning according to the directions.

I like to lay all my soft taco shells out to start filling.  Use only about half of the can of Refried Beans and evenly spread onto each soft taco.  The remainder you can save for another day or use as a side dish to this Burrito Bake.  Then do the same with your cooked seasoned meat – using the entire one pound.

Now it’s time to roll these babies up!  Be sure to line your casserole dish with your enchilada sauce first – the soft taco shells will stick to your dish if you don’t!

Now that you’re all lined up in your casserole dish it’s time to top it off and bake!

Just pour the remainder of your Enchilada sauce over your burritos, completely smothering your burritos.  Bake at 350 for about 30 minutes covered with tented aluminum foil.

Remove from the oven, sprinkle with cheddar cheese and continue to bake for 10 minutes (or until your cheese is melted).

Serve with your favorite rice (we love Brown Basmati Rice) and Refried Beans!
